- 1 eggplant
- 2 tbsp olive oil
- 1 clove of garlic
1. Slice eggplant into thin, noodle-like strips with a julienne peeler.
2. Heat olive oil and garlic in a pan over medium heat.
3. Saute eggplant in oil and garlic until soft.
4. Top with the sauce of your choosing.
