Makes approx. 6 to 10, depending how big you make them
- 1cup Montasio, grated
- Preheat oven to 400°F. Line a rimmed baking sheet with parchment.
- Working in batches, scoop several, tablespoon-sized mounds of finely grated Montasio cheese onto the baking sheet, spreading each mound about 3″ wide and spacing at least 1″ apart.
- Bake cheese until light brown and melted, but not burnt, 8 to 10 minutes. Remove the sheet from the oven and let the frico cool completely. Use a small offset spatula to remove the frico one at a time.
