Tangy Cranberry Relish



  • 1(12 ounce) package cranberries
  • 1 12cups orange juice
  • 34cup sugar
  • 12cup walnuts
  • 1grated orange, rind of
  • 14teaspoon ground ginger


  1. Bring orange juice to a boil.
  2. Add washed cranberries and sugar.
  3. Cover, reduce heat, and simmer for 10-15 minutes .
  4. Remove from heat.
  5. Mash berries with a potato masher.
  6. Stir in remaining ingredients.
  7. Chill for several hours and serve.
